Document templates
Templates decide what your customers actually read: the layout of an invoice PDF, the wording of a payment reminder, the text of a quote email.
Two kinds
Document templates render PDFs: invoices, credit notes, quotes. Mail templates render the email that carries them.
They are separate because the same invoice may be sent several times, by different messages, without the invoice itself changing.
Locales
A template can carry translations. Which one a customer receives comes from their locale, falling back to your organization default.
This is why a customer's locale is worth setting properly at creation: it decides the language of every document they ever receive, and changing it later does not re-render documents already issued.
Presentation only
A template controls presentation only. It cannot change what is charged, what tax applies, or what a line says the quantity was. Those come from the invoice, and a finalised invoice is immutable.
If a document says the wrong thing about money, the fix is a credit note, not a template edit.
